This classic carbonara Italian dish is also an easy family meal.
500 grams spaghetti
3 cloves garlic, minced
1 onion, diced
8 slices thick cut bacon, cooked and diced
2 cups fresh grated parmesan cheese
3 Tablespoons fresh lemon juice
salt & fresh ground pepper
Cook spaghetti according to package instructions.
In large frying pan, saute onions and garlic in olive oil.
Chop the bacon into small pieces and fry in a frying pan, drain the bacon fat, set the bacon aside.
In small bowl, beat eggs with salt and pepper.
When pasta is finished cooking, drain and immediately add egg mixture to pasta. (The pasta needs to be very hot in order for the eggs to cook).
Stir until eggs are cooked and well mixed with pasta.
Add onions and garlic and bacon bits to the pasta, followed by the bacon, parmesan cheese and lemon juice.
Mix thoroughly and serve with additional fresh parmesan cheese and parsley.
